Designing chocolate products with enhanced health wellbeing and technical performance using AI

Industries are challenged with delivering products with improved health benefits whilst maintaining desirable sensory quality required for commercial success. Product development is also highly dependent on resource-intensive trials, slowing innovation. This project aims to:
1. Generate novel formulations to maximise health-promoting attributes through AI-driven optimisation.
2. Develop models that integrate both product formulation and processing conditions to determine final bioactive content.
